Chicken with Apricot Sauce

2 chicken breast filets
1/2 medium onion, diced
1/2 cup apricot preserves
Dash of ginger or to taste
Brown filets in olive oil until thoroughly cooked.
Remove from pan, leaving oil and drippings in pan.
Add onions and cook until limp. Add preserves and
ginger and pour warm sauce over chicken. Serve
accompanied with Basmati rice.
