Oriental Pork

1/4 cup chopped onion
1 clove garlic, chopped
1 Tablespoon chopped candied or fresh
ginger
1-2 Tablespoons olive oil
2 boneless pork chops, cut
into thin slices
1 cup snow peas or sugar snap
peas
fresh orange juice (enough
to make a sauce
and steam)
1 Tablespoon natural peanut butter,
crunchy or smooth
In skillet, sauté onion, garlic and ginger in olive oil
until translucent. Add snow peas, pork, orange
juice, and peanut butter. Reduce heat and cover for
2 minutes.
Serve over whole wheat pasta or basmati rice if
desired. Serves 1-2.
